A taste of South and Central America is landing in Felixstowe later this month, treating diners to the true, traditional flavours of Ecuador, Peru, Mexico and Colombia.

La Casa Latina (which joins a growing band of exciting food outlets within the Beach Street complex behind Manning's Amusements) is a dream come true for Ecuadorian native Jennifer Paradez, who will open the eatery at the end of October with husband, chef Anton Ndoci.

"I've not seen a lot of real, authentic South American food in Suffolk," says Jennifer. "This is something different for the area. I don't think people will have seen anything else like it here."

Jennifer's favourite childhood dish, salchipapas, will be a core feature on the menu. She smiles with delight as she recalls the ubiquitous Ecuadorian street food snack. "It was the best thing. You'd get out of school, and there would be a vendor waiting around the corner selling this. It typically consists of sliced, pan-fried beef sausage, with French fries, mixed with coleslaw. And you'd put on different sauces."

Chicharron (basically think of the best pork scratchings you've ever had in your life) will also make an appearance. As will empanadas de viento. "It's melted cheese and onion inside a crunchy fried dough with sugar on top. They are delicious!"

While she doesn't have anything against the typical Latin-styled high street restaurant usually found in Britain, Jennifer is a firm believer that to really, truly demonstrate the beauty of these cuisines, the recipes should come from the heart.

"A lot of people get it wrong because their chefs don't come from wherever the food they are selling is from. Yes you can find the right ingredients and recipes online, but it's not the best way to do it. I remember these dishes from my childhood. I have tasted them. I know what they're meant to be like."

Jennifer and Anton have been carefully working alongside her aunt (a chef of many decades in Ecuador) to hone their offering.

There will be properly-made Mexican nachos and burritos, chocho with tostado (cured kidney beans with toasted corn flatbreads), and volquetero. "That's like what a truck driver might usually have - it's a tuna fish ceviche, originating from the Amazon jungle. It's quite popular in Ecuador," Jennifer explains.

Meat lovers who haven't gone head-first into a vat of fried pork rinds will adore the mote with fritada - fried pork cooked in spices with cheese-filled potatoes, or chicken and avocado-filled Colombian arepas.

The menu will change regularly as the couple find their feet and discover what visitors love, and they're truly hopeful people WILL love their food.

"I'm really happy about it," Jennifer says of the opening. "My dream has always been, since I moved here 10 years ago, to do this. People would ask where I'm from, I'd say "Ecuador" and they didn't know where it was. It's my chance to represent my country through food."

La Casa Latina will open from 12noon to 8pm Wednesdays to Fridays, and 10am to 10pm on Saturdays and Sundays initially, with longer opening hours on warmer days and holidays.
